Preparation time: 10 mins Cooking time: 30 minutes Course: Dip Yield: 1 cup
Ingredients
- Boiled chickpeas/canned chickpeas- 1 cup
- Beetroot Puree- 1 tablespoon
- Tahini Paste-1 tablespoon
- Garlic clove-1
- Salt- 1 teaspoon
- Crushed black peppercorn- 1 teaspoon
- Lemon juice- 1 teaspoon (optional)
- Olive oil-2 tablespoons
- Puree Water-2 tablespoons (if required)
- Extra Virgin Olive oil- 1 tablespoon
Preparation Process
Step-1
To start with hummus, first, we need to prepare a beetroot puree. To prepare fresh beetroot puree, take one beetroot, peel it off, and cut it into pieces. Then, add a cup of water and the chopped beet in a pan and boil for about 10 minutes until the beet turns soft.
Once the boiling process is done, keep the beet aside to cool down. Sieve the extra water and save it in a cup for later use. Blend the pieces of soft beetroot to make a smooth puree. If required, add a little water that we saved.
Step-3
Take a food processor/blender. Add boiled chickpeas, beetroot puree, tahini paste, garlic clove, lemon juice, salt, and black pepper. Blend all the ingredients to a coarse paste. Add a tablespoon of beetroot water obtained while boiling the beetroot to grind if required.
Step-4
Step-5
Check the consistency of the paste. If it's smoothened, transfer it to a bowl, or else add a little boiled beet water and blend it again to get a smooth paste.
Final Serve
Serve the tasty healthy hummus with pita bread, crackers, or Potata chips after drizzling extra virgin oil and garnishing it with mint, parsley, or coriander leaves.
