Veg palak paneer pockets are my innovation to the Indian delicacy. Palak paneer gravy is one of the famous sabzis in Indian food recipes. Still, kids don't find it that exciting. So, keeping all the kids in mind I thought of molding these two healthy ingredients into a scrumptious appetizer and come up with this recipe of spinach paneer roll without using any chapati and bread.
This recipe is totally new to the internet as far as my knowledge goes, for I have never seen something like this before. This recipe is an inspiration from Arbi ke Patte ke Pattod an old-times recipe that we have been preparing in our homes since a long time. So, with some twist, I tried these palak paneer pockets and they turned out really delicious with the addition of health benefits.
In this recipe, our main ingredients are Spinach, Cottage Cheese/Paneer, and Chickpea/Gram flour/ Besan. Combining and assembling these few ingredients can give you a mesmerizing platter that you can cherish without any guilt of gobbling. Without much talk let's proceed with the recipe of an easy, quick, and healthy veg appetizer prepared with the minimum number of ingredients.

Ingredients
For Rolls
- Fresh spinach leaves-15 (big size)
Batter for Palak leaves
- Chickpeas flour/Besan/ Gram flour- 1 cup
- Salt- 1 teaspoon
- Red chili powder-1/2 teaspoon
- Lemon juice- 1 teaspoon
- Water - as per requirement
For Filling/stuffing
- Finely chopped onion- 1
- Chopped Green chili- 2
- Grated ginger-1/2 teaspoon
- Crumbled Paneer/cottage cheese-1 cup
- Oil-1 teaspoon
- Salt- 1 teaspoon
- Crushed Black peppercorn- 1 teaspoon
Step-by-step Process of making Spinach/Palak Paneer pockets
Stuffing
Step-1
Initially to prepare the stuffing, heat a pan and add a teaspoon of oil to it. Once the oil is hot add ginger, green chili, and onion to the oil. Cook till they become tender.
Step-2
Season it with salt and pepper and add crumbled paneer to the cooked mix. Mix well.
Note: Keep the prepared stuffing aside to cool. Later make cylindrical shape balls out of paneer mix.
Pocket making
Step-3
Take the besan and mix salt and chili powder in it.
Step-4
Add lemon juice. Pour water to prepare a thick consistency batter of it.
Step-5
Take each spinach leaf. Spread and cover the inner side of the leaf with a besan batter with the help of a hand or spatula.
Step-6
Place the pre-prepared stuffing roll on the top of the leaf and roll it.
Step-7
Roll, fold, and seal the sides of the pockets by applying batter. Repeat the process for all the leaves.
Step-8
Now, apply the layer of besan batter to the pocket rolls.
Step-9
In a non-stick pan, pour two tablespoons of oil and place the prepared pocket rolls in it. Cover and cook for five minutes on low medium flame, then do shallow cooking.
Final Serve
Flip and cook the pockets till they become golden from both sides. Tasty, crispy hot Palak Paneer pockets are ready to serve with a dip or green chutney.
