These days, a multitude of people are giving up dairy products. There are several Indian delicacies that can easily be made vegan as compared to other cuisines which don't have a perfect vegan alternative. Creamy and saucy pasta fulfills this requirement. Milk or fresh cream is what makes pasta creamy and rich. Most vegans use plant-based milk like almond, oats, and soy milk as a substitute for dairy milk in pasta.
It has been commonly observed that vegan food is quite expensive because of the alternatives that we use for the modification of normal food. However, I finally found a perfect alternative that can easily be made at home within seconds. It not only adds the desired creaminess and richness to the pasta but also proves to be pocket-friendly. There is no compromise on the flavor, as it only makes it taste better. If one is not aware of how this pasta is prepared, no one can make it out that it's vegan.

Ingredients
Pre-prepared
- Boiled Penne Pasta- 1 and 1/2 cup
Note: Boil 4-5 cups of water in a pan. Add about 2 teaspoons of salt, and a splash of olive oil. Add pasta and cook for about 10-12 minutes for perfect al-dente pasta. Once done, drain the pasta and let it cool. Keep in mind to preserve the pasta water for further use in the recipe.
- Boiled pasta water- 2 cups
- Soaked cashew nut-1/2 cup
Note: Soak 1/2 cup of cashew in 1 cup of water for 1/2 an hour. Once the cashew is soaked completely drain the water and use the soaked cashews for further use of the recipe.

- Olive oil- 1tablespoon
- Grated ginger- 1/4 teaspoon
- Crushed garlic- 3 cloves
- Finely chopped onion- 1 big size
- Pizza sauce- 3 tablespoon
- Sugar-1/2 teaspoon (optional)
- Oregano-1 teaspoon
- Red chili flakes- 1 teaspoon
- Kashmiri Red chili powder for color- 1teaspoon
- Salt for boiling pasta and making cashew paste- 3 teaspoons or as per taste
Step-by-step Instructions to make vegan creamy pasta

Grind them well into a soft and smooth paste.
Step-3
In a pan, splash some olive oil, and add ginger, garlic, and chopped onion.

Saute well till the onion turns golden pink in color.

Add pizza-pasta readymade sauce and sugar to the mix. Stir and combine well.

Add 1 cup of pasta water to the mix and bring it to a boil. Pasta water is a starchy and salty addition to the sauce. It is the best way to thicken the sauce and to bind the pasta and sauce together thoroughly.
Step-7
Add prepared cashew paste ( 8-10 tablespoons) to the pan. Stir, mix and cook. Cashew nuts are rich in protein, fiber, and healthy fats. Moreover, soaked cashews help remove phytic acid which results in easier absorption and assimilation of nutrients from nuts. I have used cashew paste which proves to be an incredibly creamy and nutritious ingredient for making a healthier pasta.
Step-8
Adjust the consistency of the sauce according to your preference by adding pasta water. I am adding about 1 cup of the latter.

Season it with chili powder and chili flakes to bring out the desired color and enrich the taste.

Add boiled pasta and combine well till the sauce seeps into each penne.

Conclude it by sprinkling the Italian oregano herb.
