Ingredients
- Big size Potatoes- 4
- Cornflour- 4 tablespoon/1/4 cup
- Oil-1/4 cup
- Salt- 1 teaspoon
- Oregano- 2 teaspoons
- Red chili flakes- 1 teaspoon
- Garlic Powder-1/4 teaspoon
- Dry Basil Leaves or mixed herb -1 teaspoon
- Kashmiri Red chili powder/ Red paprika powder- 1 teaspoon (optional)
Making of crispy Baked Potato Wedges
Step-1
Wash the potatoes thoroughly in order to remove all the impurities. Chop the potatoes into thick wedges with the Skin.
Step-2
Heat 4-5 cups of water in an open vessel. Drop all the chopped wedges into the hot water. By doing so, the starch gets released from the potatoes. This allows them to absorb moisture which keeps the wedges soft from the inside and crispy from the outside after baking.
Step-3
Cook them for 5 minutes on medium flame and then drain to remove the excess water. Keep the potatoes aside to cool.
Step-4
In a big mixing bowl, take 1/4 cup of vegetable oil, 2 teaspoons oregano, 1 teaspoon salt, 1 teaspoon chili flakes, 1 teaspoon basil, 1/4 teaspoon garlic powder. Mix all the seasoning ingredients.
Step-5
Take the cooled Potato wedges and coat them with cornflour uniformly.
Step-6
Once the potatoes are properly coated toss them well in prepared dressing to infuse all the flavors.
Step-7
In the last add the red paprika powder to the potato wedges and toss well.
Note: You can skip the addition of red paprika powder if don't need the spicy one.
Step-8
Transfer the wedges to a baking tray.
Step-9
Bake the wedges at 180 degrees celsius for 20-25 minutes till they turn golden and crispy. Alternatively, you can also deep fry or air fry them.
Final Serve
Take the wedges out and serve crispy seasoned hot potato wedges with tomato ketchup or cheesy dip.
