Taco Shell- Mexican tacos are a wholesome meal idea. The authentic Mexican-style tacos are made with corn and flour tortillas. They are usually soft-shelled, filled with multiple versions of Mexican ingredients. On the other side, American-style are hard shell tacos with a creamy filling, topped with shredded cheese. Today's recipe here is a combination of both types, the authentic and the popular ones but with an Indian tadka. My recipe is an addition to the variations of tacos.
Filling for tacos- The filling is what defines the modification in each taco. It decides the course of the tacos if it's just a snack or a wholesome meal. The most popular and traditional filling in vegetarian versions of tacos is salsa-bean topped with sour cream. Coleslaw with mayonnaise and cheese is also well-liked as fast food. Vegetable patties, corn patties, potato tots are also commonly favored. The filling used in my recipe here is inspired by all these desired ones- a mix of potato, colorful vegetables, simple Indian spices, and vegan mayo.
Tomato onion salsa- Homemade Mexican salsa is a flavorsome mix of finely chopped tomato, onion, and green chilies with a few drops of lemon juice and some routine sauces. Salsa is considered one of the most important taco, nachos toppings. To keep the authenticity intact, I have also followed the addition of homemade Mexican tomato-onion salsa as a topping to my Mexican Tacos Veg recipe.

Ingredients
For Taco filling
Veggies
- Crushed garlic- 2 cloves (can be more if you like garlic flavor)
- Finely chopped Onion- 1
- Shredded Cabbage- 1 cup
- Minced carrot- 1/2 cup
- Finely chopped capsicum- 1/2 cup
- Boiled mashed potatoes- 2
- Steamed sweet kernels-1/4 cup
Seasoning and other
- Oil- 1 teaspoon
- Salt-2 teaspoon
- Red paprika/chili powder- 2 teaspoon
For Assembling Tacos we need
- Taco shell- 12
- Salsa- 1 cup
- Filling- as prepared
- Vegan Mayonaise - to enhance and garnish
- Chopped green Coriander- to garnish
Process of making Homemade taco shell
Let's prepare the filling
Step-1
Take a deep pan, add oil, crushed garlic, and onion. Saute them on medium flame till they leave their rawness.
Step-2
Add shredded cabbage, minced carrot, finely chopped green capsicum. Mix and cook.
Step-3
Add boiled mashed potato and steamed sweet corn.
Step-4
Season the filling with salt, and red paprika powder. Mix and combine well.
Step-5
The Mexicana tacos potato filling is now ready.
Assembling of Veg Mexicana Tacos for Lunch/dinner or party food

Step-7
Fill the potato veggie stuffing as prepared in the shell.
Step-8
Take the fresh Mexican salsa and top it up on the shell. The salsa I'm using in this recipe is also homemade though you can get various brands of Mexican salsa at grocery stores, if you have time then make your own salsa by following the recipe of a fresh tomato-onion salsa at home in 10 minutes
Step-9
Drizzle some mayonnaise. Grated cheese can also be added to magnify the taste.
Final Serve
Garnish it with fresh coriander and serve with a smile to surprise your family with ultimately crunchy and delicious Mexicana Tacos veg with potato filling.
