Ingredients
Beetroot Tortillas
- Wheat flour/refined flour- 1 and 1/2 cup
- Beetroot-1
- Salt-1 teaspoon
- Oil-1 teaspoon
- Water- 2 cups for boiling beet
Rice filling
- Steamed or leftover cooked rice- 1 cup
- Onion- 1 chopped
- Garlic-2-4 cloves
- Oil-1 teaspoon
- Red chili powder-1 teaspoon
- Red chili sauce-2 teaspoon
- Salt-1 teaspoon(only if rice doesn't have any salt)
- Chopped Green coriander- 1 tablespoon
For Wrap
- Prepared half-cooked tortillas-6
- Shredded cabbage-1 cup
- Carrot Julians-1/2 cup
- Prepared Rice filling- 1-2 cups
- Butter- to broil the tortillas
- Grated cheese- 1 cup
- Eggless Mayonnaise- 1 cup
- Thousand island sauce- 1/2 cup (optional and can be replaced by adding tomato ketchup into mayo with oregano and Italian herbs)
Preparation process
Tortillas Making
Step-1
Wash and chop the beetroot and boil it with 2 cups of water in a pressure cooker or pan to make it soft.
Step-2
Once done, keep it aside to cool. Make sure the mix gets cooled completely before further use. A hot one can cause accidents while grinding.
Step-3
Blend the room temperature purée in a grinder to make it smooth.
Step-4
Mix flour, salt, and a cup of beet purée together in a mixing bowl.
Step-5
Knead well to prepare a soft dough. Keep it aside to rest for 5-10 minutes.
Step-6
Put some oil on the dough. Knead the dough for 3-4 minutes.
Step-7
Knead till it yields a smooth and elastic dough. Keep it covered for 10 minutes and then move to the next step.
Step-8
Part the dough into equal portions and roll them into the balls.
Step-9
With the help of a rolling pin, roll a dough ball into a thin, round tortilla.
Step-10
Heat the skillet and place the rolled tortillas on the hot skillet until it shows bubbles and golden dots. Flip and cook until both sides are half-cooked.
Step-11
Place the half-cooked tortillas in a hot case and keep rolling and cooking the rest.
Filling Preparation

Heat a teaspoon of oil in a pan, add crushed garlic, and saute.

Add chopped onion and cook till they turn a little pink.

Add red chili powder, and salt according to taste.

Add red chili sauce or green chili sauce for a tangy flavor.

Add leftover rice to the mix. Stir and mix well to combine rice and masala uniformly.

Add chopped coriander to garnish. The rice filling is ready.
Wraps making
Step-18
Take a prepared tortilla and put 1 tablespoon mayonnaise and thousand island sauce. Spread it over the tortilla.

Place shredded cabbage, and carrot in the center as shown in the picture above.
Step-20
Put a tablespoon of prepared rice filling. Add grated cheese over the salad.

Now wrap the tortillas as desired. My method- first fold from the bottom horizontally.

Then fold the vertical flaps from both the ends in order to make a closed wrap.

Heat the skillet and spread some butter over it. Then put the filled wrap and cook until it becomes crispy from all the sides.
