Ingredients
Veggies For Salad
- Shredded green/red cabbage- 1 and 1/2 cup
- Iceberg lettuce (torn into small pieces)-1 cup
- Tomato (deseeded and thinly sliced)-1
- Paneer/cottage cheese(diced into cubes)- 150 gm
- Green Olives- cut each into 2
For Dressing
- Fresh cream- 4 tablespoon
- Yogurt-4 tablespoon
- Lemon Juice- 1 tablespoon
- Mustard sauce- 1/2 tablespoon
- Salt- 1/2 teaspoon (as per taste)
- Black pepper-1/2 teaspoon
For Crunchy Herbed Croutons
- Bread slice - 1
- Oil for shallow frying- 2 tablespoons
- Salt to sprinkle- 1/4 teaspoon
- Pepper to sprinkle- 1/4 teaspoon
- Mixed herbs or oregano- 1/2 teaspoon
For Garnish
- Roasted peanuts- 2 tablespoon
Preparation Process
Crouton making
Step-1
To make herbed croutons, first cut the bread slice into cubes of about 1/2".
Step-2
Heat 2 tablespoons of oil in a pan. Reduce the heat and add bread cubes to the hot oil.
Step-3
Fry for about 2 minutes or till they change color to golden red-brown from both sides. Take them out on kitchen tissue.
Step-4
Immediately sprinkle salt, pepper, oregano, or mixed herbs and toss well.
Step-5
Flavored Herbed Croutons are ready for the salad.
Salad making
Step-1
Gently mix all the ingredients of the dressing in a bowl and prepare a pouring consistency cream sauce.
Step-2
Take cabbage, paneer, lettuce, olives, and tomato slices in a big mixing bowl.
Step-3
Pour the prepared dressing into the salad.
Step-4
Mix the salad and dressing uniformly. Keep it in the fridge to chill till serving time (or for about 1/2 an hour )
To serve, mix salad gently, Serve topped with bread croutons, and roasted peanuts.
