I got the idea to cook Veg Mexican rice for my sister during a recent gathering we were invited to, during
summertime. I was serving plain Mexican rice version, but when she tasted it,
she said it’s way better to make it with a little bit of cheese. I thought that was cool.
After giving it a thought I created this recipe and felt happy when it turned out good. I added lots of fresh veggies like red onion, carrot, capsicum, and corn to this bowl to make it rich in nutrients.
The vegetarian Mexican rice made without
cheesy sauce always preferred by my family because of its spicy and tangy taste, but my kids actually like the cheesy version much more.

When making this vegetarian Mexican cheesy rice recipe, be sure to use organic rice, which comes from the earth in a way that can hold nutrients. For extra flavor, use fresh shredded carrot, bell pepper, red onion, corn, basil, and red chilies.

Ingredients
For vegetable rice
- Boiled Rice- 2cup
- Boiled corn-1/4 cup
- Minced carrot- 1/4 cup
- Finely chopped capsicum- 1/4 cup
- Finely chopped Onion- 1
- Salt- 1teaspoon
- Red chili sauce- 1/2 tablespoon
For cheesy sauce
- Grated cheese- 2 tablespoon
- All-purpose flour- 1 full tablespoon
- Salted butter- 2 tablespoon
- Milk- 1 cup (250ml)
- Salt- 1/4 teaspoon
- Crushed black pepper- 1/4 teaspoon
- Oregano- 1/2 teaspoon
- Chili Flakes- 1/4 teaspoon
For the spicy enchilada sauce
- Blanched and peeled tomato- 2
- Soaked dry red chili - 4
- Garlic powder-1/4 teaspoon
- Thyme -1/4 teaspoon
- Oregano- 1/2 teaspoon
- Salt-1/2 teaspoon
- Cumin powder-1/4 teaspoon
- Tomato ketchup- 1tablespoon (optional, if you desire less spicy sauce)
- Red chili powder for color- 1/4 teaspoon
- Oil- 1 teaspoon
Extras
- Boiled rajma/kidney beans-1/2 cup
- Oil for cooking
Cooking Process Of Cheesy Mexican Rice
Making of enchilada sauce
Step-1
Put all the mentioned ingredients tomatoes, red chili, garlic powder, thyme, oregano, salt, cumin powder, ketchup in a mixing jar.
Step-2
Blend them all together to make a smooth puree.
Step-3
Heat oil in a pan, add the prepared puree into the pan and cook for few minutes till it becomes a little thick.
Step-4
Turn off the heat, the sauce is ready. keep it aside.
Making of vegetable rice
Step-1
Heat 1 teaspoon oil in a pan, add chopped onion, and cook till it becomes golden pink.
Step-2
Once the onion is done, add chopped carrot, capsicum and mix well. Continue cooking for another two minutes.
Step-3
Add boiled corn to the veggies and mix well.
Step-4
Season the veggies with 1 teaspoon salt and 1/2 tablespoon red chili sauce.
Step-5
Add the boiled rice to the pan and mix uniformly.
Step-6
Vegetable rice is ready. Keep them aside.
Making of cheesy sauce
Step-1
Heat 2 tablespoon butter in a non-stick pan, add 1 tablespoon all-purpose flour into the butter and cook for a minute on a very low flame.
Step-2
Once it blends well together add 1 cup of milk to the mix and keep stirring.
Note: For the perfect flavored sauce, use the milk which is boiled with clove-studded onion, because the more time it gets for cooking, the more it releases the taste.
Step-3
Add 1 onion studded with 5-6 cloves to the sauce. This will releases its flavor and yields a nice aromatic sauce.
Step-4
Once the sauce starts showing thickness add chili paprika, salt, oregano- the seasonings, and grated cheese. Stir and mix well.
Step-5
Remove the added onion. and keep the cheesy sauce aside.
Layering Of Mexican Cheesy Rice Bowl
Step-1
Take a serving bowl, Spread the first layer of Boiled kidney beans in it.
Note: Canned Kidney Bins can also be used for this recipe.
Step-2
For the second layer spread vegetable rice evenly.
Step-3
For the third layer spread enchilada sauce.
Step-4
The fourth layer spread is a cheesy sauce. Spread all the layers and keep repeating until the bowl is filled to the top.
Step-5
Delicious, mouth-watering, and kids' favorite Mexican veg cheesy rice bowl is ready to relish for lunch/dinner meal.
