Combination of spinach soup and tofu. There are two ways to prepare this soup- broth-based (liquid) or cream-based (primarily liquid). The taste of spinach soup gels well with cream.

Ingredients
Veggies
- 1 cup of Spinach puree’( a bunch of spinach will be enough for the required quantity of puree’)
- 1 small sized finely chopped onion
- 2 cloves finely chopped garlic or garlic flakes
- ¼ cup of boiled sweet corn kernels
Note: Take washed corn kernels and microwaves/steam them in water for 2 minutes.
Spices and others
- Crushed peppercorn- 1teaspoon
- Salt or as per taste
- ¼ cup milk
- Butter/olive oil-1 teaspoon
- Water/vegetable stock (as available)

- While shopping for greens pick firm, crisp, and evenly colored.
- To avoid spoiling spinach leaves, make them wet.
- Make sure that the leaves give a good snap if you break one.

Preparation Of Soup

- Turn on the flame, put a saucepan on low flame,
- Add very little oil or butter to it.
- Add chopped garlic and cook for about ½ minute or till it loses its rawness.
- Add chopped onion and sauté’ till it turns a little pink.

Now drop in the corn kernels and add salt and pepper to give a little spice. Give a quick stir and bring it to a boil once.
Notes: You can even add fresh cream to the soup for a thicker consistency and creamy texture
