Ingredients
For Salad
- 250 gm broccoli (1 small flower)- cut into small-sized floret with stalk.
- Small-size green apple-1 cut into dices
- 2-3 lettuce leaves-dipped in water
- Cherry tomatoes 4 – cut into two
- Yellow bell pepper 1- chopped in bite-size pieces
- Onion 1- diced
- 2 cups of water, 1/2 tsp salt, and 1/2 tsp sugar to blanch broccoli
Note: Instead of cherry tomato normal tomato can also be used.
For Dressing
- 1/4 cup soya cream
Note: Vegetarians can also use fresh milk cream if soya cream is not preferred.
- Tomato sauce-2 tablespoon
- Lemon juice-1 tablespoon
- Soya sauce-1 tablespoon
- Sugar -1/2 teaspoon (can vary as per taste)
- Black pepper powder-1 teaspoon
- Salt- 1 teaspoon (as per taste)
- Chopped green coriander- 1 tablespoon
- Some crushed mint leaves.
Steps to cook "Broccoli-Apple Veg Salad"
Step-1
Boil 2 cups of water in a large pan with 3/4 teaspoon salt and 1/2 tsp sugar. Add broccoli florets and boil for 3-4 minutes. Drain immediately and rinse in cold water to prevent further cooking.
Step-2
In a mixing bowl, put all ingredients of dressing in proper proportion.
Step-3
Churn all the mixed ingredients in a small mixer for 1 minute. Keep the dressing aside.
Step-4
In a big mixing bowl add broccoli, capsicum, onion, lettuce, cherry tomato along with an apple. Pour the prepared dressing and mix well altogether with two forks.
Note: Check for salt and pepper if required add more.
Step-5
Serve chilled topped with chopped coriander and mint leaves.
Note: You can top the salad with some roasted almonds and walnuts for a crunchy texture.
