Homemade crispy masala pasta chips are such a finger snack that you can't stop eating after putting one in your mouth. Keep the crock on your night lamp and you will find yourself eating one every minute.
This time for Diwali, I was looking for an unrepeated jar-to-bowl snack that my kids can scrunch on and that can be served to guests. Instead of the store-bought masala kurkure, fried frams, packeted chips, I thought of giving these handy snacks a try at home.

That is how these crunchy masala pasta kurkure made it to my dictionary of recipes. These are the easiest to prepare deep-fried dry snacks, requiring no kneading and rolling hassle of dough. Can be forged with the already stocked goods in our kitchen pantry. It's a total win in my eyes.

- Fuseli Pasta- 1 cup
For Boiling
- Water- 3 cup
- Salt-1 teaspoon
- Oil-1 tablespoon
- Baking soda- 1 pinch
For Coating
- Corn flour- 2 tablespoon
- Salt-1/4 teaspoon
- Oregano-1/2 teaspoon
- Garlic Powder-1/4 teaspoon
For Frying- Oil
For Masala Mix
- Kashmiri red chili powder- 1 teaspoon
- Peri-peri /Maggi magic masala- 1 teaspoon
- Black Salt- 1 teaspoon
- Oregano- 1/2 teaspoon
Steps for Making Crispy Masala Pasta Namkeen
Step-1

Once cooked, strain the boiled pasta from the colander and run under cold water. Keep It in the colander till the water drains out completely.
Step-3
In a mixing bowl add and combine cornflour, salt, garlic powder, and oregano to prepare a dry mix for pasta coating.

Once the pasta is dried, coat it well in a prepared dry mix of cornflour, salt, and oregano.
Note: The drying process will take around 15-20 minutes to dry.

Heat oil in a pan on low medium flame and drop the coated Pasta into the oil.

Once the first batch gets over repeat the same process for the rest of the pasta and keep the fried pasta aside.

Prepare a masala mix by combining red chili powder, Peri-peri or magic masala, black salt, and oregano.

Mix the fried pasta in the masala and coat it well uniformly with your hands.
Note: The mix is spicy so using kitchen gloves for mixing is advisable.
Final Serve
Crispy Crunchy Homemade Masala Kurkure is ready to enjoy the festival, parties, tea-time, and late-night hunger pangs.
