Vegetarian Rice rolls are basically a rice paper pocket filled with fresh, flavored, colorful crispy vegetables, noodles, or steamed rice and served with soy sesame dip.

Ingredients
For Rolls
- Rice paper sheets- 12
- Lukewarm water- 3 cups
For Stuffing
- Lettuce - 10-15 leaves
- Carrot Julians- 1 cup
- Red bell pepper (thin strips)- 1 cup
- Yellow bell pepper (thin strips)- 1cup
- Cucumber with peel cut into thin strips- 1 cup
- Green capsicum cut into thin strips- 1/4 cup
- Mint leaves- 5-6
- Moong sprout- 1 tablespoon
- Roasted Flaxseed- 1 teaspoon
- Rock Salt - 1 teaspoon
- Freshly grounded black pepper- 1/2 teaspoon
- Sweet chili sauce- 1 tablespoon
For Dip
- Soy sauce- 1 tablespoon
- Vinegar-1 tablespoon
- Sweet chili sauce- 1 tablespoon
- Seasame seed- 1/4 teaspoon
Preparation process
Salad preparation
Step-1
Take a mixing bowl, add bell pepper, cucumber, capsicum, and carrot strips.
Step-3
Add mint leaves to the vegetable salad. I personally love the Mint as it adds a fresh and cooling flavor to the salad.
Step-4
Add sprouted moong. Sprouted moong is a very healthy and rich source of protein.
Step-5
Add roasted Flaxseeds. Flaxseed contains Omega3 fatty acids, fiber, lignans that help in improving blood sugar, weight loss, and curing constipation. While eating Flax seed ensure not to eat raw and unripe flax seed.
Step-6
Mix all the ingredients well. Fresh vegetable salad is ready to fill.
Rolls preparation
Step-7
Take lukewarm water in a big bowl. Lukewarm water is a must for softening rice paper sheets. It helps in Rolling and shaping the sheets.
Step-8
Dip the rice roll sheet in it for about half a minute. Check if it turned a little soft.
Step-9
Place it on a wooden board, and put a lettuce leaf.
Step-10
Put a spoonful of prepared salad mixture on lettuce.
Step-11
Start rolling the sheet to form a perfect roll. Ensure Rolling should be done tightly.
Step-12
Refrigerate them with cover for 15-20 minutes.
Step-13
Once froze cut them into two parts.
Dip preparation
Step-1
In a bowl, mix black soya sauce.
Step-2
Add 1 tablespoon white vinegar to it.
Step-3
Add 1 tablespoon red sweet chili sauce.
Step-4
Add sesame seed and give a good mix.
Final Serve
Serve chilled rice paper roll colorful salad with sweet and tangy sesame dip.
