It's a quick veg recipe for spaghetti and pasta lovers residing in metro cities as working professionals or living as paying guests (PGs) or in private hostels or students in college hostels.
It's quite boring to blend taste buds with the same old basic recipes for homemade quick-to-cook dishes. It's better to not be
oblivious to variations in everyday food.
I'm experimenting with pasta, came up with this
healthy-looking green spaghetti Avocado pasta.
Avocado is a nutritious fruit, especially among the health-conscious population considering its health benefits. different shapes- from pear-shaped to round one, varying from green to black in color.
This is a creamy avocado penne pasta or spaghetti pasta, a fine alternative to other complex vegetarian recipes for snacks meal ideas at home from the health point of view.
I've used spaghetti
pasta in this recipe but it can be made with any other type of pasta-
like penne and or elbow pasta.

Ingredients
For pasta
- Spaghetti pasta (wheat or refined flour pasta)- 100 gm
- Salt- 1 teaspoon
- Vegetable oil- 1 teaspoon
- Water- For boiling
For Avacado Paste
- Avocado- 1
- Coriander- 1 cup
- Green chili- 1
- Garlic Cloves-3
- Olive oil-1teaspoon
- Squeezed Lemon juice- 1 (medium size)
- Dry Basil-1 teaspoon (optional)
- Salt- 1 teaspoon (or as per taste)
- Grounded Black peppercorn
For Sauce
- Wheat Flour - 1 tablespoon (All-purpose flour can also be used)
- Salted Butter- 1 tablespoon
- Cold Milk- 200 ml
- Salt- 1/2 teaspoon
- Oregano- 1 teaspoon
For Topping
- Grated processed or parmesan cheese- 1/4 cup
Preparation Process
Step-1
Switch on the flame, put a wide vessel with 3-4 cups of water. Add salt and oil and bring it to a boil.
Step-2
Once the water starts boiling, add the uncooked spaghetti pasta.
Note: In this recipe, I'm using wheat spaghetti pasta. You can use another type of pasta too.
Step-3
Keep stirring and cook to al-dente on medium-high flame for 10 minutes.
Step-4
Drain the cooked pasta and rinse under cold water. Keep the pasta aside for later use.
Preparation of Avocado Dip
Step-5
Wash the fruit first. Then cut and chop/mesh Avocado and collect it in a blender.
Step-6
Add green coriander, green chili, garlic cloves, olive oil, lemon juice, and dry basil to the blender along with the avocado.
Step-7
Add a dash of water and grind to make a smooth and soft textured spread.
Note: The water amount can be less or more depending on the Avocado. If the avocado is sufficiently ripe, then it needs less water, or else more is required.
Step-8
Check if the spread has properly meshed. Then, add salt and black pepper and mix well.
Final Serve Cooking
Step-9
Heat a non-stick pan on a low flame. Add a tablespoon of butter.
Step-10
As soon as the butter starts to melt, add wheat flour to it.
Step-11
Stir to combine butter and flour together.
Step-12
As it starts giving an aroma, add a cup of milk gradually.
Note: Keep stirring the sauce to avoid any lumps.
Step-13
Keep cooking and stirring till it becomes semi-thick.
Step-14
Add three (3) tablespoons of the prepared avocado paste to the sauce.
Step-15
Stir and mix the sauce evenly. Add salt.
Step-16
Season it with oregano herbs.
Step-17
Add the boiled pasta and mix well.
Step-18
Sprinkle grated cheese over the cooked Creamy Avocado Spaghetti Pasta for an added cheesy taste.
