Ingredients
For crispy noodles
- Half boiled noodles- 200 gm
- Corn flour- 4 tablespoon
- Salt- 1 tablespoon
- Oil- for frying
For vegetable sauce
Vegetables
- Shredded Cabbage- 1 cup
- Yellow bell pepper Julians- 1/2 cup
- Red bell pepper Julians- 1/2 cup
- Green capsicum Julians- 1/2 cup
- Long sliced Onion- 2 small size
- Baby corn- 5 (cut * thick slices)
- Grated ginger- 1 teaspoon
- Crushed garlic- 4
- Finely chopped green chili- 1
(Vegetables like mushroom, green onion can also be added)
Sauces and other
- Vegetable oil- 1 tablespoon
- Sriracha chili sauce- 3-4 tablespoon
(Red chili sauce can also be used if Sriracha isn't available)
- Soya sauce- 1 teaspoon
- Vinegar- 2 tablespoon
- Tomato ketchup- 2 tablespoon
- Sugar- 2 teaspoon
- Kashmiri red chili powder- 1 teaspoon ( for nice color)
- Salt- to taste
- Corn flour- 2 tablespoon
- Water- 2 cups
Preparation Process
Crispy noodles making
Step-1
Boil the noodles till they are fork-tender. Strain the excess water and keep them aside to cool down.
Step-2
In a big mixing bowl take 4 tbsp cornflour, 1tbsp salt, and mix them.
Step-3
Coat the noodles evenly in this dry cornflour mix.
Step-4
Heat oil in a deep wok/kadhai. Drop the bunch of coated noodles in the hot oil. Ensure the flame should be medium-high while frying the noodles.
Tip: Ensure the oil should be properly hot otherwise noodles won't form a base and will scatter all over the wok. Then it will take time to fry.

Fry till they show a beautiful yellow golden color.
Step-6
Turn off the flame and take out the noodles on a kitchen towel to remove all excess oil. Crispy noodles are ready.
Vegetable chop suey sauce making
Step-1
Keep all the chopped veggies ready before you start.
Step-2
Heat 1tbsp oil in a kadhai, add grated ginger and garlic. Saute' for few seconds.
Step-3
Add chopped onion slices and green chilies and cook for 2 minutes.
Step-4
Add thin corn slices, carrot, bell peppers, and shredded cabbage. Saute' for 10 minutes on medium flame.
Tip: It's advisable to add hard vegetables first so that they get proper time to cook.
Step-5
Check if veggies turned a little soft. If no, then cook for another 5 minutes.
Step-6
Time to flavor the sauce by adding the required measurement of sriracha sauce, Tomato sauce, vinegar, and soya sauce. Mix and Saute for 2-3 minutes.
Step-7
Add 1 teaspoon sugar to the veg sauce to balance the flavors of chop suey. You can use any brown or white sugar. Here I'm using brown sugar.
Step-8
Add red paprika powder or red Kashmiri chili powder along with salt and mix well.

Add 2 cups of water to the veggies mix and bring it to a boil.
Step-10
To thicken the sauce, take 2 tbsp cornflour and 2 tbsp water. Mix them well to make a slurry. Add the prepared slurry to the sauce.
Step-11
Boil and cook on a medium flame for another 5-10 minutes till it shows semi-thick consistency.
Step-12
Garnish it with chopped green onions or coriander leaves and serve hot vegetarian American chop suey with crispy noodles.
