Ingredients
Major
- Green peas-1 cup
- Chopped onion -1
- Ginger garlic paste-1 teaspoon
- Diced boiled potato -1
- 600 ml of water/ vegetable stock
Other Ingredients
- Salt as per taste
- Crushed black peppercorn (to flavor and garnish)
- 1 tablespoon – olive oil
- Dry Kasturi methi (optional)
Preparation Process
Step-1
In a saucepan, heat oil, then add ginger garlic paste, and chopped onion. Stir and saute till it appears translucent.
Step-2
Add peas to the pan, continue cooking with a covered lid to blanch the peas.
Step-3
Add the magical ingredient- boiled diced potato. Give a quick stir, mix well.
Secret: To get the creamy texture in this vegan soup, boiled potato is added. It makes the soup smooth and thick without any cream inclusion but tastes as good as cream-based soup.
Step-4
Add vegetable stock. Let it simmer and cook on low medium flame till peas become fork-tender (soft).
Note: It's always good to use vegetable stock for soup preparation but it isn't available then lukewarm water can also be used.
Step-5
Season the prepared soup with salt and pepper. Mix well and turn off the flame. Let it cool for about 10 minutes.
Step-6
Blend the mix in a mixer to make a smooth puree consistency.
Step-7
Final Serve
Serve hot green soup topped with olive oil and crushed black peppercorn for the best taste.
