Tea - morning or evening has a special place in our daily routines - more than the taste of it, we cherish the time spent with family during these times. Hence, the importance of snacks served during tea time has equal or more importance. Nothing better than Teacake which is one thing that's perfectly balanced on both sweetness as well as moisture. It works equally well with a fancy custard or as simple as an Ice cream scoop as an evening dessert. Teacakes also treat hunger pangs really well.
Homebaked eggless sponge cakes and tea cakes are something that I've seen a lot of people struggling for fluffy, soft, and spongy outcomes. Here I bring an easy recipe which if followed properly, even your little grown-ups could make it.

This recipe is a bonanza of 2-in-1 as one can enjoy both chocolate and vanilla flavor at the same time.

Ingredients
Wet mix Ingredient
- Oil-1/4 cup
- Curd-1/2 cup
- Powdered Sugar-1/2 cup
Dry mix ingredients
- Maida-1 cup
- Baking powder-1teaspoon
- Baking soda-1/2 teaspoon
Extra
- Milk-1/2 cup
- Cocoa Powder- 1tablespoon
- Water-1 teaspoon
- Butter-for greasing the pan
- Vanilla essence (optional)
Preparation Process

Place a colander over the bowl, add dry ingredients and sieve them in to wet mix.
Step-3
Add milk gradually to the mix and keep whisking to make a lump-free smooth cake batter.

Add vanilla essence at this stage. Combine well and follow cut and fold technique to form a fluffy and pouring consistency cake mix.
Tip: The cut and fold method is important as it aerates the batter.

Once the batter is ready part it into two bowls by a ratio of 2:1.

Take the bowl with less quantity and sieve cocoa powder into it.

Add cocoa powder with teaspoon water and mix to combine well.

Grease the cake mold, Take 1-ladleful white batter, and drop it in the mold.

Take 1 tablespoon cocoa batter and drop it over the white batter.
Step-10
Repeat the process and form a structured layer of both the batter.
Tip: Don't overload the cake pan with the batter. Keep it half-filled as the batter needs space to rise.

Finally, bake the cake in the preheated oven at 180 celsius for 30-35 minutes.
Tip: Along with the oven also preheat the cake mold before pouring the batter.

Check the cake after 25 minutes by pricking a toothpick into it. If it comes out clean then take out the cake on a grill for 20 minutes to cool down. Otherwise, bake it for another 5 minutes.
Step-14
Cut the cake into slices and serve with tea for a delicious energetic day.
