In childhood, every summer vacation at grandma’s house, my aunt used to make these potato-filled deep-fried bread rolls. Those rolls had such a unique taste that even today I can feel their taste in my mouth right now. It's easy to prepare these potato rolls especially if you've any leftover boiled potato or jeera aloo from last night. Even if potatoes are not ready don't worry! It won't take more than 30 minutes to prepare them.

Ingredients
Major
- 8- fresh bread slices
Note: if bread is not fresh then it's good to remove the corners/ side crusts.
Vegetables
- 4- small-sized boiled mashed potato
- 1-small size finely chopped capsicum
- 1-medium sized onion (optional)
- 1-finely chopped green chilies
- 1 tablespoon grated ginger
- 2-tablespoon finely chopped green coriander
Spices
- Cumin seed/jeera -1 teaspoon
- Turmeric powder-1/4 teaspoon
- Red chili powder-1 teaspoon
- Salt - 1teaspoon (as per taste)
- Amchur Powder-1 teaspoon
Extras
- ½ cup milk
- ½ cup water
- 1/4 cup grated cheese (optional)
- 5-6 tablespoon oil (for pan-frying and filling)

Once done, turn off the flame, add chopped green coriander. Mix well, and keep the mix aside to cool.

Step-by-step veg bread roll preparation

Mix milk and water in a big mixing bowl. Firstly take bread slices and gently dip the corners in the water-milk solution. Then, dip one side of the bread slice in the same.
Note: This process will make the bread moist and quite pliable. It will make the rolling and shaping of the roll easier.
Tip: Dipping bread in a milk-water solution makes bread rolls very crispy but soft.

Seal the prepared stuffing roll in soaked bread slice by overlapping and folding technique as shown in the picture below.
Note:
While binding if the roll shows any exposed filling then cover it with soaked bread completely.
Forming the bread roll is not so easy part for beginners but with practice, you will learn.
Rolling the bread into a shape could be tricky but you needn't worry about the shape. Just seal it in the best possible way.

In a non-stick pan heat four tablespoon oil and drop the prepared veg rolls. Then shallow fry, till they turn golden in color.
Final serve
A non-fried quick and simple vegetable bread roll is ready to relish you with great taste. Serve hot or at room temperature with green chutney or tomato ketchup.
