Summers have set in completely, skies are sunny bright and temperatures touching the high 40's in most parts of the country already. This makes for a perfect time for checking out some coolers recipes.
The scorching heat of the sun keeps
us in dilemma whether to go out or stay at home. Covid along with scorching heat suggests it's preferable to stay home only.
Looking at the positive sides of the summers, studies hint that summers have various health benefits for our well-being. Wanna know?
Well, reasons that make summers good for health :
- Sweating: It’s been noticed that we sweat most in summers, which helps in keeping our body cool from inside and also improves blood circulation.
- Daily dose of vitamin D: Sitting and walking under the morning summer skies can give us the required vitamin D daily dose which we otherwise miss during colder or rainy seasons.
- Summers are a boon for fruit lovers: Hot weather brings along lots of juicy fruits. Craving for juicy Pineapples, Mangoes, Grapes, Melons keep us hydrated and provide the essential fibres and nutrients.
- Better water intake: We are naturally more inclined towards the water during summers, which fulfils our optimum requirement of 2-3 litres of water daily.

It was the first time in Goa when I tasted the virgin pina colada mocktail and fell in love with it. I have added a slight variation to it by combining flavours of mango with it.

Ingredients
- Chopped Pineapple Wedges - 1 cup
- Unsweetened Coconut Cream/Milk- 100ml
- Mango pulp- 1/4 cup
- Pudina/Mint leaves- 6-8
- Lemon juice- 1/4 teaspoon (optional)
- Sugar- 2tbsp (can vary as per the taste of sweetness)
- Black Salt- 1teaspoon
- Water- 100 ml
- Ice Cubes (for chilled serve)
Recipe of pina colada
Step-1
Add pineapple wedges, pudina leaves, salt, and sugar in a mixture grinder/blender.
Step-2
Churn and blend it into a fine smooth puree. Make sure it shouldn't have any chunks left in the puree.
Step-3
Add 100 ml of chilled thick coconut milk, mango pulp, lemon juice and cold water to thin the drink.
Note: Coconut cream with pineapple juice can also be added in place of coconut milk and water if preferred.
Step-4
Blend again to make a smooth drink with even mixing.
Tip: It's good to pass the mix through the strainer once to avoid pulp. This way you will get a smooth drink

Final serve
Garnish it with mint leaves and pineapple wedges and serve chilled to beat the heat of sunny summers.
