Ingredients
For fingers
- 3 peeled potatoes (cut into fingers)
- 2-3 cups of oil for deep-frying
First coating
- Corn flour- 1 tablespoon
- All-purpose flour- 1 tablespoon (Maida)
- Rice flour- 1/2 tablespoon
- Salt- 1/2 teaspoon
- Garlic powder- 1/4 teaspoon (optional)
Second coating
- Corn flour- 1 and 1/2 tablespoon
- All-purpose flour- 1 and 1/2 tablespoon
- Rice flour- 1 and 1/2 tablespoon
- Salt- 1/2 teaspoon
- 1/2 cup of water to make a slurry
For making honey sauce
- Oil- 1 tablespoon
- 2-4 chopped garlic cloves
- 1/2 teaspoon finely grated ginger
- 1 finely chopped onion
- 1 chopped tomato
- Tomato ketchup- 1 tablespoon
- Salt- 1/2 teaspoon
- White sesame seeds- 2 tablespoon
- Red chili sauce- 1/2 tablespoon (optional)
- Soy sauce- 1 teaspoon
- Vinegar- 1 teaspoon
- 1/2 cup of water
- Honey- 1/2 tablespoon
- Chopped spring onion (only green part)-2 tablespoon
- Chopped fresh coriander-1 tablespoon
Preparation method
To prepare potato fingers
Step-1
- Soak peeled, washed, and cut fingers in cold water for about 30 minutes or more.
Step-2
- Take 5 cups of water in a vessel, add 1/2 tablespoon salt and bring it to boil. Add the drained potato fingers. Steam the fingers for 7-8 minutes.
Step-3
- Turn off the flame and strain water from the colander. Keep the fingers aside to cool.
Step-4
- In a mixing bowl, mix all the ingredients of the first coating (mentioned above) such as flours, salt, garlic powder. Then coat the fingers gently and evenly in the mix.
Step-5
- Heat oil in a deep pan or kadhai. Deep fry the fingers in batches till they appear half-fried. Once done keep them aside on a kitchen towel to cool.
Note: While frying, drop only one potato finger at one time so that they don't stick together.
Step-6
- Till the time fries get cool, prepare a slurry by mixing ingredients of the second coating with water. It should be a smooth and medium-thick slurry.
Step-7
- Dip half-fried-fingers in the slurry and fry again in hot oil till they turn golden and crisp. Once done, keep aside on a kitchen towel.
To prepare honey chili sauce
Step-1
- Heat 1 tablespoon of oil in a wok or non-stick kadhai. Add chopped garlic and ginger along with the onion. Saute till they turn golden.
Step-2
- Add tomato and saute till they become mushy.
Step-3
- Add salt, tomato ketchup, vinegar, soya sauce, seasame seeds and mix all of it well together.
Step-4
- Add half a cup of water and cook till the sauce becomes a little thick.
Step-5
- Turn off the flame and add honey and chopped green onion and mix well.
Step-6
- Toss the fried fingers in the sauce and mix evenly.
Final Serve
Serve to kids their best-loved snack 'Crispy honey potato fingers'. Sprinkle sesame seeds and chopped coriander on top for an even better taste.
