Ingredient
For Salad
- Small macaroni- 200 gm ( 1 and 1/2 cup)
- Roasted peanuts with red skin- 2 tablespoon
- Small Diced Cucumber-1
- Torn parsley or mint leaves- 1 tablespoon
For Italian Dressing
- Salad oil/virgin olive oil/ regular cooking oil- 1/4 cup
- Lemon juice-1 teaspoon
- Vinegar- 1/2 teaspoon
- Garlic cloves- 3/4 flakes
- Roughly chopped onion-1
- Salt- 1/2 tablespoon
- Sugar-1/2 tablespoon
- Red chili powder-1 teaspoon
- Oregano- 1 teaspoon
- Bayleaf- 1
- Mustard powder (optional)- 1teaspoon
Preparation process
Step- 1
In a wide pan, Boil 5-6 cups of water. Add 1 teaspoon salt and 1 teaspoon cooking oil. Add Macaroni and cook for 8-10 minutes. Keep stirring continuously till they increase their size and turn soft. Turn off the flame.
Step- 2
Strain the water and run cold water over boiled Macaroni to prevent it from sticking.
Step- 3
In the meantime of boiling macaroni, let's prepare its dressing-
Take a blender or grinder, add all the Italian dressing ingredients (as mentioned ⬆️).
Step- 4
Blend them generously for 2-3 minutes till it becomes thick and creamy. Chill for 5 minutes in the refrigerator.
Note: The dressing can be kept in an airtight jar in the refrigerator for a week. Stir well before using. It's a multipurpose dressing and can be relished as a dip or bread spread.
Step- 5
Mix cucumber, macaroni, and peanuts together in a mixing bowl.
Step- 6
Pour the Italian chilled dressing and mix nicely and softly.
Final serve
Garnish chilled "Macaroni Peanut Salad" with Parsley or Mint leaves before serving.
