"Eggless Strawberry cake". I always love to bake whenever I get farm-fresh Strawberries in my pantry.
How do you like Strawberries in your desserts?
We, humans, find many ways to be happy and celebrate. Cakes have become synonymous with celebration across the globe and be it birthdays, anniversaries, or just a happy evening – we all want to enjoy it by having a bite of it.
Recently, I got amazingly looking and sweet in taste Strawberries from Stara Districts, "Mahableshwar" and "Panchgani"- Famous for 80% production of Strawberry from India. I got 5kg of these and after enjoying eating, and sharing with friends and families, I was left with some. I was wondering how to make the best use of them. What triggered my mind at that moment was "Strawberry cake". I thought to myself, why not create my own recipe of a cake which had the strawberry flavor infused in itself. And so, here I am!
Making eggless cakes at home is almost every week attempt for me and my daughter. So continuing that, I hogged on cake ingredients and made this super soft, moist, and flavored Eggless Strawberry cake in the easiest way.

Ingredients
For strawberry sauce [1.1]
- Fresh, washed, and clean strawberries- 500 gms (15-20 pcs)
- Sugar- 1/4 cup
For DryMix [1.2]
- All-purpose flour/wheat flour- 1 and 1/2 cup
- Baking soda- 1/2 teaspoon
- Baking powder-1 and 1/2 teaspoon
- Powdered sugar/Icing sugar- 1 tablespoon (For decoration)
For Wet Mix [1.3]
- Salted butter-3 tablespoon
- Oil- 2 tablespoon
- Condensed milk-200gm
- Milk-150ml
- White Vinegar-1and 1/2 teaspoon
- Vanilla essence or strawberry essence- 1teaspoon
Preparation Process
Strawberry Sauce [1.1]
Step-1
Heat a saucepan, cut the strawberries, and add to the pan along with sugar. Bring it to a boil.
Step-2
Continue cooking for 4-5 minutes or until the strawberries become mushy and the compote has thickened to desired consistency. Once done, keep it aside to cool down.
Step-3
Add the compote to the blender and blend for seconds to make a smooth sauce.
Note: You can Prepare and store this sauce in a glass jar for Round a week. It can also be added to milkshakes and ice-creams.
Dry mix [1.2]
Step-1
Sift all-purpose flour, baking soda, baking powder in a mixing bowl.
Note: Sieving is important to remove all unwanted particles and uniform mixing of dry ingredients.
Wet-mix [1.3]
Step-1
Add the mentioned quantity of vinegar and essence to the milk and keep it aside for 5 minutes.
Step-2
In the meanwhile, take a big mixing bowl, add butter and oil into it. Whisk well.
Step-3
Add condensed milk to the mix and beat well till it becomes little light.
Step-4
Add prepared strawberry sauce to the above mix and blend all together.
Note: Preserve some sauce for drizzling over the cake for decoration.
Step-5
Now add the milk ( mentioned in step 1) to the wet mix. Whisk and blend all the wet ingredients.
Final cake mix
Step-1
Take wet mix [1.3]. Start adding dry mix [1.2] in portions to the wet mix. Keep Stirring using a whisk tool in order to form a lump-free smooth batter.
Step- 2
While making the batter, use the Cut and Fold technique.
Tip: For preparing a fluffy and perfect batter, the cut and fold technique has to be applied. Softly mix dry and wet ingredients, don’t whisk them vigorously. Always fold the batter in one direction and then cut to form air circulation in it.
Baking Process
Step-1
Preheat the oven at 180 degrees temperature for 10 minutes.
Step-2
Grease a big cake tin mold or pan with melted butter and then dust it with dry flour uniformly.
Tip: Consider every corner of the baking pan and grease them generously. While applying butter and dusting the pan, put more than needed so that it can cover all sides, corners, and bottom of the pan properly. Once it is done, tap out the excess dust.
Step-3
Tip: Give your cake space to rise. Don't overload the pan, only fill it half or 2/3 is enough or there won’t be any space for your cake to extend and rise.
Step-4
Now place the mold in the preheated oven and set the timer for 35 minutes.
Step-5
Wait till it stops. Now take a toothpick test to check whether the cake is done or not!
Tip: Prick a toothpick to the center of the cake and if it comes out clean, it means the cake is done. If not, then maybe it needs a little more time.
Step-6
Once the cake passes the toothpick test take it out. Place the cake on a wired rack for about 30 minutes to cool down. Once cooled, run a spatula around the edges, place a plate on the top, turn it upside down and gently tap to let it come out.
Step-7
With the help of a sieve sprinkle icing sugar all over the cake and decorate it with some fresh strawberries for a fruity taste.
