Veg oats uthappam is a hearty breakfast for me. What's yours?

Oats are one of the healthy food grains from cereal plants. Formerly there were only two types of oats in my knowledge but during some research, I came across other variations of oats like:
- Oats groats
- Steel-cut oats
- Scottish oatmeal
- Oat bran
- Old fashioned oats
- Instant oatmeal
- Rolled oats
- Quick oats
Uthappa in Karnataka, Ootappo in Tulu, and Uthappam in the Tamil language is a South Indian savory pancake. Generally, It's prepared with lentils, rice, onions, herbs & spices. It's a very common breakfast in south Indian homes and is mostly eaten with Coconut Chutney, Sambar, or Podi/Masala.

My fondness for oats always inspires me to innovate oats dishes that not only look different but also taste differently. With the same desire, I made this recipe of Oats Uttapam in my own way, which turned out really good. The oats Infused uthappam adds a richness of minerals, vitamins, and antioxidants compounds to this regular dish.

Ingredients
For Topping
- Medium Size Onion - 1 Finely chopped
- Regular Size Tomato -1 Finely chopped
- Tablespoon Ginger- 1 Grated/chopped
- Green chili - 1 Finely chopped
- Green coriander- Finely chopped
- Fresh Curry leaves- Torn
For Uttapam Base
- Roasted Quick Oats-1 cup
Tip: Roast oats on low flame till it starts giving aroma.
- Light Golden Roasted Rawa- 1/4 cup
- Curd- 1/4 cup
- Water- 1/2 cup ( can vary as per consistency)
- Fruit Salt/baking soda- 1 or 1/2 teaspoon
- Salt- 1 teaspoon
Preparation Process
Step-1
In a grinder make a powder of roasted oats.
Step-2
In a mixing bowl, mix the powdered oats, roasted Rawa, and curd.
Step-3
Whisk well for the lump-free batter. Add water to make a pouring consistency batter. Let it rest for 10 minutes.
Step-4
In the meanwhile, prepare the topping separately by mixing onion, tomato, green chili, green coriander, curry leaves, and ginger.
Note: You can also add red chili powder and chaat masala to the veggies if want to make masala uthappam.
Step-5
Once the batter is set, add fruit salt or baking soda and mix gently.
Tip: To use baking soda, mix it with 1teaspoon oil and then put it into the batter. Else put fruit salt in the batter, add a dash of water on the fruit salt, it will show froth. Immediately, mix it generously.
Step-6
On a non-stick Griddle/Tawa, pour a ladleful batter and spread a little.
Step-7
Sprinkle oil on the sides of the uttapam and cover it with a lid for about 1 minute.
Step-8
Check if bubbles appear and the batter forms a structured base.
Step-9
Now, add veg topping masala over the uttapam and press lightly with a spatula to avoid spills of veggies.
Step-10
Sprinkle a little bit of oil and flip the side. Cook till it becomes golden red in color from both sides.
Step-11
Healthy, quick, and easy-to-make veg oats uthappam is ready for your rousing morning mood. I personally enjoy it with tomato-garlic chutney. You can also team it up with coconut chutney, and green chutney.
