Ingredients

- Mushroom (washed, cleaned, and cut)- 200gm
- Corn Kernels (soaked in lukewarm water)- 1/4 cup
- Green Olives (cut*2)- 7-8
- Boiled Green Peas- 1/4 cup
- Crushed Garlic Cloves- 4
- Ginger Paste/ Grated- 1 teaspoon
- Onion (roughly chopped)- 2
- Green chili (chopped)-2
- Tomato (roughly chopped)-2
- Homemade Tomato Puree- 1cup
Spices and others
- Salt- to taste
- Red chili powder- 1 teaspoon
- Dhaniya powder- 1/2 tablespoon
- Turmeric powder- 1 teaspoon
- Mix veg masala- 1 teaspoon (optional)
- Oil- 1 tablespoon

Directions to cook "Mix Veg Curry Recipe"
Step-1
Heat a wok or kadhai, add oil, ginger with garlic. Roast them till they leave their rawness.
Step-2
Add onion and saute' for five minutes till it turns pink.
Step-3
Add tomato and tomato puree. Saute for 5 minutes
Step-4
Add all the spices and cook for another 5 minutes till it releases the oil on the sides. Turn off the gas and keep it aside to cool down.
Step-5
In the meanwhile, heat a pan and saute mushroom and zucchini for around 5 minutes.
Step-6
In a grinder, take the mixture mentioned in [step 4] and grind well to get a smooth puree.
Step-7
Heat a pan and add the puree, stir well. Now add all the boiled, sauteed vegetables and olives. Mix well.
Step-8
Cook for 2 minutes. Garnish with coriander and serve hot with Paratha or rice.
