In such situations what can be better than traditional Indian delicacies. Coming from a Jain family, I always try to prepare quick vegetarian dinner recipes, even if my guests are non-vegetarians.

Koftas, the fried veggie dumplings are dipped and served with Spicy Indian/Mughlai curry. Indian spices are aromatic and rich in flavors which can change any tasteless dish to a lip-smacking one. Dry veg kofta with curry is very popular in India. You will find their inclusion in all lunch and dinner menus. It's a unique and simple to prepare gravy that can add richness to your meal menu.

This recipe may be a little time-consuming, but it worth your time. Cauliflower kofta curry is an add-on to Indian curries like Paneer kofta, Malai kofta, Lauki kofta, and Palak kofta. Creamy, rich in taste Gobhi Kofta gravy meal is difficult to leave till the last bite gets over.

Preparing cauliflower koftas with curry is a vegetarian full meal dinner idea. On the other hand, the same mix of veg koftas balls can also be served as starters to your guest. For a twist, you just roll them in semolina, Sewaiyan, and then fry.

Ingredients for Kofta
Vegetables
- 1 cup grated cauliflower
- 1cup boiled mashed potato
- Grated paneer (cottage cheese)-1 cup
- Finely chopped green chilly-1
- Chopped ginger-1 teaspoon
- Chopped coriander-1 tablespoon
Seasoning
- 1 teaspoon salt
- 1/2 teaspoon chili paprika
Oil for frying
- 2 cup vegetable oil/olive oil
Extras
- 1 tablespoon cornflour
- 1 tablespoon gram flour (besan)
Kofta Preparation Process
Step 1
In a mixing bowl add grated cauliflower, cottage cheese, mashed potato, ginger, green chili, and coriander and mix well.
Step 2
Add salt, chili paprika, cornflour, and besan flour to bind the vegetables. Make sure it forms a soft dough consistency.
Now take a portion of the mix and prepare medium size kofta balls. The shape of koftas can vary as per choice.
Tip: if you find your mix a little sticky then grease your hands and then roll the mix.
Heat oil in a deep pan or kadhai. Deep fry the prepared kofta balls until they turn golden red and crispy.
Tip: while dropping the balls makes sure your stove flame should be high. Once you have dropped the balls, wait for a couple of minutes before turning the flame to medium-low. This way it will avoid balls from cracking in the oil.
Step 5
Keep them aside on a kitchen towel/paper to remove excess oil.
Serve Gobhi kofta balls with tomato ketchup, green coriander chutney, or a cheesy dip as a quick, tasty snack/starter
Ingredients for Gravy
Vegetables
- 1 large size roughly chopped onion
Note: ( For preparing Jain kofta curry skip onion )
- 2 crushed garlic cloves
- 4 small roughly chopped tomato
- 1 green chili
- 1 small piece chopped ginger
- Chopped Coriander for garnishing
Spices
- Cumin seed-1 teaspoon
- Coriander powder (sukha dhaniya powder)-2 teaspoon
- Turmeric powder-2 teaspoon
- Red chili powder-1 teaspoon
- Kashmiri Mirch powder-1 teaspoon
- Kasturi methi-1 teaspoon
- Garam masala powder-¼ teaspoon
- Salt to taste
Extras
- 5-6 cashew nuts
- ½ cup curd
- 1 cup water or as required
Gravy Preparation
Take a deep pan to add 1 tablespoon oil add cumin seed to the oil. Once the seeds start crackling add ginger, garlic, and saute well. Add roughly chopped onion to the pan. Sauté for 3-5 minutes.
Add tomatoes, green chilies, cashew nuts, to the pan. Mix them well and sauté them. Cover the pan with the lid for it to gather steam for a few minutes. Add salt as per taste at this step for fast cooking.
Let them cook for a few minutes and check if veggies have become mushy. Add all the spices except garam masala and Kasturi methi and sauté again for 5 minutes. Wait till the mix starts leaving oil on the sides.
Turn off the flame and let the mixture cool for 10 minutes. After cooling down, blend the mixture to form a smooth puree.
In the same pan on low flame, add this smooth puree and give a quick stir.
Add whisked yogurt to the puree and keep stirring to avoid curd from curdling. Keep cooking for about 5-8 minutes.
Once it starts leaving oil on the sides of the pan, add around 1 cup of water. Bring it to a boil.
Note: change water proportion as per desired consistency.
After a boil, add Kasturi methi and garam masala powder and cook for another 5 minutes on low flame. Gravy is now ready.
Gravies for example malai kofta, matar mushroom, lauki kofta, paneer pasanda can also be made with the same gravy
Final serve
Pour the gravy into a serving bowl and dip kofta balls in it. Garnish with chopped coriander. Enjoy it with chapatti( Indian bread), Lachha paratha, or steamed rice veg gobhi
